Pumpkin Protein Balls
Pumpkin is highly nutritious, packed with vitamins, specifically vitamin A, and high in antioxidants that help reduce chance of developing chronic diseases. Moral of the story, make these ASAP and enjoy for a yummy, quick and nutritious snack!
Servings: Makes around 10-12 protein balls!
Prep Time: 2 minutes
Total Time: 5 minutes
Wet Ingredients:
1/4 cup runny nut butter (only ingredients should be peanuts/almonds/cashews & maybe salt, no extra oils or ingredients)
1/4 cup pumpkin puree (100% pumpkin, nothing added)
2 tbsp liquid sweetener (honey, agave, maple syrup)
Dry Ingredients:
1 cup whole rolled oats
2 scoops/servings vanilla protein powder
1/2 tsp cinnamon + 1/8 tsp nutmeg (can sub spices for pumpkin spice mix)
Handful of dark chocolate chips
INSTRUCTIONS:
Step 1. Mix dry ingredients together in a bowl. Then add in wet ingredients and stir until fully combined.
Step 2. Scoop small spoonfuls out and roll into balls. Store protein balls in freezer in airtight container/glass jar!
