Dark Chocolate Peppermint Granola Mix
Perfect little mix to have on hand during the holiday season or when you’re just in the mood for a dark chocolate + peppermint combo!
This granola mix makes for a perfect snack or great option to use to top your yogurt or smoothie bowl! Definitely satisfying that sweet tooth

What You Need
raw nuts - I used a combo of crushed pecans, almonds, walnuts, and cashews.. but feel free to you whatever you’d prefer
whole rolled oats - I used Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats
maple syrup - I used 100% pure maple syrup, could swap for another liquid sweetener if you’d like
egg whites - I used 100% liquid all white, egg whites.. just make sure it’s the clear egg whites, not yellow ッ
peanut butter - I used a creamy peanut butter, but could swap for almond if you wanted
coconut oil
vanilla extract
peppermint extract
dark chocolate chips - I used Lily's Baking Chips Dark Chocolate ッ
peppermint candy canes
RECIPE DETAILS
Ingredients:
1/2 cup raw nuts, chopped
1 cup whole rolled oats
1/4 cup maple syrup
1/4 cup egg whites
1/4 cup peanut butter
2 tbsp coconut oil
1 tsp vanilla extract
1/8 tsp peppermint extract
handful of dark chocolate chips
2 peppermint candy canes, crushed
Instructions:
Preheat oven to 325° and line a baking sheet with parchment paper. Set aside.
In a large bowl, mix together the chopped raw nuts and whole rolled oats.
In a small saucepan warmed over medium-low heat, melt the coconut oil. Once melted, add in the peanut butter and maple syrup. Mix to combine using a rubber spatula. Stir until all ingredients are well combined and pourable, about 1 minute. Remove pan from heat to cool slightly. Let mixture cool, then stir in the vanilla extract, peppermint extract, and egg whites. (IMPORTANT to let it cool so the egg doesn’t cook when added)
Pour the mixture over the dry ingredients. With rubber spatula, mix until well combined. Try to get everything coated without any dry spots, except for the nuts. Spread the granola out on the prepared baking sheet in a single layer.
Bake at 325° for 15 minutes. Remove from oven and stir the granola, bringing the edges into the center and mixing it all up. Then, spread it back out on the baking sheets and bake for another 10 to 15 minutes. Remove from the oven and set aside. It will get crispier as it cools down.
Once cooled, sprinkle on the chocolate chips and crushed candy canes. Place in the fridge for about 20 minutes to firm up. Then store in a cute mason jar or whatever you may have on hand!
