Puffed Rice Bars

One of my most favorite creations! These bars will become your next, new favorite snack, no doubt about it ッ

These bars are so delicious, crunchy, sweet, savory, you name it - perfect for satisfying that sweet or savory tooth, to enjoy with friends and family AND keep handy in the freezer when you’re craving a little something something!

Servings: Makes around 12 bars!
Prep Time: 10 minutes
Total Time: 30-60 minutes

Wet Ingredients:

  • 1/2 cup runny nut butter (only ingredients should be peanuts/almonds/cashews & maybe salt, no extra oils or ingredients)

  • 2 tbsp coconut oil

  • 2 tbsp liquid sweetener (honey, maple syrup, blue agave)


Dry Ingredients:

Topping Ideas: Pick what you’re feeling and add in your own creative touches!

  • Puffed Rice Pumpkin Bars:

    • 1/4 cup pumpkin puree + 1/4 cup unsweetened greek yogurt

    • 1/2 cup pumpkin puree + 1 serving vanilla protein powder + 1 tbsp liquid sweetener (my fav)

  • Puffed Rice Peanut Butter Bars:

    • leave bars as is, with no layer on top OR…

    • 1/4-1/2 cup unsweetened greek yogurt + 2 tbsp peanut butter

    • 1/4-1/2 cup unsweetened greek yogurt + 2 tbsp powdered peanut butter + 1 tbsp liquid sweetener

  • Puffed Rice Chocolate Bars:

    • 1-2 tbsp coconut oil + 2-3 tbsp dark chocolate chips — MELT TOGETHER

      • extra fun toppings - sprinkle of unsweetened coconut flakes on top

      • extra fun toppings - sprinkle of sea salt on top

*If you run out of topping mixture when spreading it across the bars, make layer more thin or just whip up some more topping mixture to add to rest of the bars!

INSTRUCTIONS:

Step 1. Set oven to broil. On a baking sheet, evenly spread out the puffed brown rice and lightly spray with extra virgin olive oil spray. Only leave in for about 30 seconds or until you see puffed rice start to get a bit crispy, just a little toasted! NOTE - You can leave this step out and skip to Step 2 if you’d like. (I like to do Step 1 quick to make the bars a bit more crunchy, but just a personal preference)

Step 2. Throw puffed rice in a bowl (If you’re using any extra add-in’s or making these bars with protein powder, toss those ingredients in the bowl now too!)

Step 3. Turn stove burner on low. In a small saucepan, melt together the wet ingredients (coconut oil, nut butter, liquid sweetener). Melt together just enough to be runny (avoid burning it)

Step 4. Slowly pour melted mix into the bowl with puffed rice. Stir together until everything is FULLY coated. If mixture appears too dry, melt a bit more wet ingredients together and pour into puffed rice bowl. Mixture should seem wet/sticky enough that it will hold together once cut into bars , not tooooo wet or dry!

Step 5. Line baking pan with parchment paper. Scoop mixture into baking pan, spread out evenly and firmly press mixture down so everything is nice and compact! Then place pan in freezer to allow bars to harden together (about 30 minutes, longer if needed!)

Step 6. Once bars are hard and firm, take out of freezer. Top with any of the toppings above or create your own idea! You can do all the same or split bars into sections and have a couple different kinds! All up to YOU!

Step 7. Once toppings are spread out evenly on bars, place bars back into freezer to allow toppings to harden up (about another 30 minutes, longer if need). Take out once topping have hardened and firm! Pull harden bars out of the baking pan, cut into 12ish bars and enjoy!

Feel free to share with your friends and family or place leftover bars in glass container/ziplocks. Then store in the freezer to have handy when you want a little something something ッ
